A generous picking of fresh spinach β€” tender leaves and stems, perfect for cooking down.


🍳 Step 1 – Prepare the spinach

First, boil the spinach in hot water for 1–2 minutes until wilted.
Drain well, then blend into a smooth green liquid.


πŸŒ€ Step 2 – Make the spinach mix

Blend the cooked spinach until smooth. This becomes the base for your dough and gives the noodles their colour and flavour.


🍜 Step 3 – Make the noodles

Put the appropriate amount of spinach mixture into:

  • an automatic noodle machine, or
  • mix with flour by hand to form a dough, then knead and cut into noodles

Dust lightly with flour to stop sticking.
