A simple, satisfying way to use fresh spinach
Thereβs something very rewarding about turning a bag of freshly picked spinach into something completely different β in this case, vibrant green homemade noodles.

A generous picking of fresh spinach β tender leaves and stems, perfect for cooking down.
π³ Step 1 β Prepare the spinach

First, boil the spinach in hot water for 1β2 minutes until wilted.
Drain well, then blend into a smooth green liquid.
π Step 2 β Make the spinach mix

Blend the cooked spinach until smooth. This becomes the base for your dough and gives the noodles their colour and flavour.
π Step 3 β Make the noodles

Put the appropriate amount of spinach mixture into:
- an automatic noodle machine, or
- mix with flour by hand to form a dough, then knead and cut into noodles
Dust lightly with flour to stop sticking.

- A pinch of salt
- A pinch of oil

- Harvest young leaves for the best flavour
- Keeps producing if you pick regularly
