A quick and versatile garlic butter that works beautifully with fresh vegetables, bread, or new potatoes. This is one of the simplest ways to make the most of a good garlic harvest.
Ingredients
- 100g unsalted butter (softened)
- 2–3 cloves fresh garlic (finely crushed)
- Small handful parsley (optional)
- Pinch of salt
- Black pepper to taste
Method
- Allow the butter to soften at room temperature.
- Crush the garlic cloves very finely.
- Mix the garlic into the butter thoroughly.
- Stir in chopped parsley if using.
- Season lightly with salt and black pepper.
- Chill briefly if you prefer a firmer texture.
Keeps in the fridge for several days and freezes well in small portions.
