Simple Garlic Butter

A quick and versatile garlic butter that works beautifully with fresh vegetables, bread, or new potatoes. This is one of the simplest ways to make the most of a good garlic harvest.

Ingredients

  • 100g unsalted butter (softened)
  • 2–3 cloves fresh garlic (finely crushed)
  • Small handful parsley (optional)
  • Pinch of salt
  • Black pepper to taste

Method

  1. Allow the butter to soften at room temperature.
  2. Crush the garlic cloves very finely.
  3. Mix the garlic into the butter thoroughly.
  4. Stir in chopped parsley if using.
  5. Season lightly with salt and black pepper.
  6. Chill briefly if you prefer a firmer texture.

Keeps in the fridge for several days and freezes well in small portions.
